The Executive Chef is responsible for ensuring that all restaurant guests have the highest quality culinary experience possible while maintaining a profitable Food and Beverage Department. This position evaluates all the food production activities of a fast-paced, customer satisfaction-focused operation. The Executive Chef will manage the strategic and day-to-day operations. This position maintains highest professional food quality and sanitation standards. This position oversees all aspects of the culinary function of Breckenridge Distillery Restaurant.
Essential Responsibilities:
Is actively involved in the daily operation by being a "hands-on" Chef through modeling proper culinary techniques and working alongside employees and exhibit professional demeanor through appearance and by maintaining a positive attitude toward all employees and guests
Employee training and development to include but not limited to food quality and presentation, food safety, safety, customer service
Coordinate the selection, training, coaching, development, motivation, and evaluation of employees to ensure exceptional service for our guests
Exhibit culinary talents by personally performing day-to-day tasks while leading the staff and managing all food related functions
Develop written spec sheets for each menu item to include name, description, portion size, ingredients, cost per serving and menu price. Responsible for taking pictures of all menu items and for maintaining both the photos and spec sheets in a central location.
Oversees inventory management to assure all outlets are adequately supplied at all times. Performs periodic inventory. Requisitioning and Purchasing. Maintains effective vendor relationships
Experience with purchasing of food products and food cost analysis
Control labor and operating expenses through effective planning, budgeting, purchasing decisions, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit
Establish and maintain all par levels for food items, kitchen supplies, and all necessary products needed to operate the culinary department
Oversee the compliance of state health regulations in safe handling, storage and service of all food items and ensure that all china, glassware, silver, and kitchen equipment is properly sanitized, racked, and stored
Ensure that sanitation standards as set forth by local, state & federal Health Department regulations are in compliance as well as the cleanliness and organization of the kitchen and its equipment
Must possess a high level of organization and the ability to handle multiple tasks/diverse duties while determining appropriate priorities for their completion
Able to deliver and exceed the expectations of highly demanding clientele
Professional appearance and manner, good character to work in a fast-paced team. Positive, honest and energetic work ethic
Complete other duties as assigned in support of the business

Must be detail-oriented and extremely organized with the ability to learn new programs and procedures quickly
Must be proficient on Microsoft Word, Excel, and PowerPoint
Must be flexible to work extended hours due to business requirements including nights, weekends and holidays
Strong grasp of food and beverage cost controls
Must possess a sense of urgency, enjoy fast paced environment and provide excellent guest service
Effectively prioritize workload and handle multiple projects at the same time
Successfully communicate with front and back of the house staff in a team environment
Think logically to make decisions
Understand the effect policies and economic trends will have on organization's plans
Education and Experience:
Minimum Five (5) years as an executive chef in a high-volume food industry
Minimum five (5) years' experience as an executive sous chef in a high volume full service food operation
Must possess a culinary degree
Physical/Environmental Requirements:
Ability to work around hot equipment (grill, fryer)
occasionally be exposed to cold temperatures (walk in freezer/refrigerator)
Ability to lift and carry up to 50lbs
Employee has to work under pressure and time deadlines during peak periods.
Stand/walk for 10+ hours per shift.
