Diamond Mills & BLACKBARN Hudson Valley is seeking an experienced Banquet Sous Chef that understands the business of running a successful catered event. The ideal candidate has a love for people and food, to join Chef Marcos and his team in delivering the best guest service to our customers.
Located in the Village of Saugerties, Diamond Mills & BLACKBARN Hudson Valley offers fresh Farm to Table cuisine in a picturesque setting above the Esopus Falls. It’s the perfect place for an experienced manager to apply their skills while working in one of the most beautiful facilities in the Hudson Valley.
We are seeking a dedicated, flexible, high energy Banquet Sous Chef, who has a passion for hospitality and guest satisfaction.
Qualifications:
- Culinary degree preferred
- Previous supervisor responsibility is required
- Thorough knowledge of food handling and preparation techniques of large catered functions
- Knowledge of food and beverage preparation techniques as well as health department regulations
- Excellent organizational and communication skills
- Ability to assist in developing new, creative menus
- High quality standards & the ability to communicate effectively
- Must be able to provide 3 professional references
- Bi-lingual preferred (English / Spanish)
Responsibilities include:
- Overseeing all aspects of the daily operation
- Management of the kitchen and food production areas
- Conducting and overseeing prep
- Supervising and coordinating kitchen staff to ensure food is prepared according to chef and customer specifications
- Ensuring compliance with health department regulations to achieve "A" rating
- Maintaining kitchen facilities and equipment
- Expediting orders
- Effectively managing contracted timelines
- Working on the line
- Scheduling staff
- Organizing food orders, inventory and food costs
- Assisting in menu development
- Assisting and supporting the Executive Chef
- Assisting Executive Chef in selecting and training kitchen staff
- Enforcing health and safety standards in the kitchen
- Helping to ensure customers are served efficiently and effectively
- Supervising and managing kitchen staff
Due to the demands of the banquet facility, candidates must be willing to adhere to a flexible schedule, including weekends & holidays.
