The Role:
The Sous Chef is responsible for the cost-effective operations of clean and safe kitchens and dish room facilities while assisting with ongoing supervision of producing food of the highest quality, executed in a timely and consistent manner. Primary duties include:
- Ensure compliance with restaurant Standard Operating Procedures and all regulations
- Maintain high standards in all areas of security, safety, cleanliness and sanitation
- Create and exemplify a positive and motivating workplace
- Proper use of techniques, cooking procedures, portion size, and presentation
- Assist with setting appropriate prep levels to ensure fresh product and effective use of man-hours
- Ensure preventive maintenance, cleaning and repairs are scheduled in a timely manner
Qualifications:
- Minimum 2+ years of experience as a Sous Chef for a $6M+ upscale, full-service restaurant
- Has a comprehensive, high-level understanding of policy and procedure to ensure compliance relative to appropriate workplace behavior, scheduling/timekeeping, and safety
- Strong attention to detail, organization, and possess multi-tasking skills
- Always proactive, seeking out potential problems before they arise with the ability to make clear, concise decisions
- Spanish speaking skills are required
