JOB SUMMARY
Under the general direction of the Director of Food and Beverage, the Restaurant/Catering Manager is responsible, along with the Restaurant Operations Manager for the day-to-day operations of the Entertainment Complex Restaurant and Catering operations. The person in this position provides leadership and guidance to subordinate team members to ensure that Rigby’s Entertainment operates efficiently and consistently to provide exceptional quality and service to exceed guest’s expectations and to achieve company goals.
ESSENTIAL RESPONSIBILTIES & DUTIES
The following duties and responsibilities are normal for this position; they are not to be construed as exclusive or all inclusive:
Ø Assists with managing the day-to-day operation of Rigby’s Entertainment Restaurants.
Ø Developing food and drink menus and set pricing for Catering operations.
Ø Maintain product inventory and ensure minimal waste of product.
Ø Coordinates ordering of food and restaurant supplies.
Ø Coordinate food preparation and serving during events.
Ø Work closely with Party/Events department to plan and facilitate catering events.
Ø Utilize purchasing procedures to order materials and supplies to ensure best quality and pricing.
Ø Maintain operating budget and operating reports.
Ø Train and Supervise subordinate team members to insure a high level of service, preparedness, and professionalism is achieved and maintained.
Ø Hiring, training, scheduling, evaluating, and firing team members.
Ø Implement operating policies and procedures in risk management in accordance with applicable codes, ordinances, and regulations.
Ø Coordinate and cooperate with other Managers to ensure smooth and efficient operation of the Food and Beverage Services including Caterings, Parties, and Special Events.
PERIPHERAL DUTIES
Ø Perform all other duties as assigned.
DESIRED MINIMUM QUALIFICATIONS
Education and Experience
The following standards express the minimum background of training and experience desirable as evidence of all applicant's ability to qualify for this position. Other training or experience, if evaluated as equivalents, may qualify an applicant for this position.
Candidate must have a bachelor’s degree in a related field or have experience sufficient to thoroughly understand the objectives and operation in order to direct team members and maintain a high standard of service, usually interpreted to require a minimum of 5 years of experience as a manager in a similar facility, professional training, industry certifications, or advanced degree.
Necessary Knowledge, Skills, and Abilities:
Ø Knowledge and experience in Food and Beverage Operations
Ø Knowledge and experience with creating menus from scratch.
Ø Ability to determine requirements in ingredients and set portions while considering guests needs and special requests.
Ø Ability to oversee food prep and guest service.
Ø Exceptional communication skills, both written and verbal.
Ø Knowledge of best practices for risk management, food prep, and service.
Ø Skills in operating office equipment, including a computer.
Ø Ability to make quick decisions based on sound judgement and best practices guidelines.
Ø Ability to meet the physical demands that allows them to lead and supervise a team.
Ø Ability to have a flexible work schedule.
LICENSES/CERTIFICATIONS
Candidate must hold current certification in Serve Safe and Tips training. Hold or be able to obtain within 3 months of employment, a current driver’s license issued by the State of Georgia.
SUPERVISORY CONTROLS
This position reports directly to the Director of Food and Beverage.
SUPERVISION EXERCISED
Leads and directs and Entertainment Complex team members to ensure company goals and objectives are met and that all operating policies and procedures are followed.

Work is performed in both outdoor and office settings. Some outdoor work or travel by motor vehicle may be required. Fast paced, requiring flexibility in handling a variety of functions simultaneously.
